Irving, grew up in Wellfleet and has been farming oysters and clams in Wellfleet for about 40 years and has owed the shellfish lease he operates on for 33. He started out working the wild fisheries, dragging and picking, and has done about every type of fishing you can in these waters. He got a shellfish lease when very few were farming in our harbor and built up a business selling oysters and clams all around the country. Over time he has owned fish markets, a restaurant, wholesale companies, and has contributed years to volunteering for shellfish related causes. Now he has scaled everything back to focus on doing what he loves to do, farming shellfish. Irving and his wife Holly have four children, who at one point have all worked in the industry.
